This Colombia Santa Monica coffee is a highly unique co-fermented experimental lot produced by Jairo Arcila in Quindío, Colombia. It features a Castillo variety grown at 1450–1500 MASL, subjected to a 72-hour dry anaerobic maceration with real strawberries and wine yeast, resulting in a intense strawberry-dominant profile with caramel, rose, and cream notes.
